Chicken in annatto sauce
Estilo Sonia Ortiz

6 chicken pieces
2 roma tomatoes
2 tablespoons annatto paste
¼ onion
1 garlic clove
¼ teaspoon thyme
1 dash of ground cumin
1 potato
1 carrot
Salt to taste
Black ground pepper to taste
1 tablespoon olive oil

Tiempo de preparación: 60 minutos
Sirve: 6 personas

To prepare the marinade, put the annatto paste, roma tomatoes cut into fourths, garlic clove, onion, thyme, cumin, pepper, salt and a little water in the blender. Blend well until you obtain a homogeneous mixture.
Put the chicken pieces in a bowl and add the marinade. Mix and let marinate for 30 minutes. It can be marinated the day before in refrigeration.
Cut the potato and the carrot in medium pieces.
Heat the oil in a deep pot and fry the chicken pieces on all sides. Add the leftover marinade and some water. Cover and simmer for 20 minutes.
Add the potato and carrot pieces and let cook a little more until the veggies are cooked.
Serve hot with white rice.
